7×7 – “The Cheese Course”
Daphne Zepos, cheese importer and the new co-owner of the Cheese School of San Francisco, picks five cheeses for the perfect platter – by Sara Deseran.
A review by Heather in SF
We live in locavore’s heaven in the Bay Area and happily it is not hard to find amazing, artisinal crafted foods such as pasture-raised meats, truly free-range chickens, lovingly tended vegetables and fruits and the miracle that is hand-crafted cheese – the perfect combination of milk and bugs and mold. Because of my former position giving culinary tours at the Ferry Building and my Wallace-like tendencies towards a nice spot of cheese I feel that I know rather a lot about our local cheeses. Ferran Adria wisely counseled the crowd at the Castro Theater this month that one can never really know everything (or enough) about food, so I happily accepted an opportunity to attend Cheese School with a dear friend to learn a little more. Inside Scoop SF
To keep that cheese train of thought moving, Inside Scoop asked Cheese School owners Kiri Fisher and Daphne Zepos to share a few of their favorite cheesemongers in the Bay Area. From the old guard to the new guard, from a “beguiling” goat cheese specialist to a place to get rare Andante Dairy items, their picks (and explanations) are visible when you click on the “Show Caption” in the article.
